Buy a single-variety extra virgin oil directly from a mill in Puglia. Choose Coratina if you like an intense, bitter and peppery oil; Ogliarola or Peranzana if you prefer it milder. Check the harvest year on the label. The easiest Puglian mill to buy from abroad is Frantoio Muraglia in Andria, which sells its Coratina and Peranzana oils on Amazon.it, .de, .fr and .co.uk.

Which olive variety?

Coratina, grown around Andria, Corato and Bisceglie, gives the region's most intense oils: green, bitter and spicy, rich in polyphenols. Ogliarola Barese is gentler and fruitier. Peranzana, from the north of the region, has soft almond and tomato-leaf notes. A tasting set of small bottles is the easiest way to find your style.

Labels to look for

Puglia has five DOP olive oils (Collina di Brindisi, Dauno, Terra di Bari, Terra d'Otranto and Terre Tarentine) and the regional IGP Olio di Puglia. Both guarantee where the olives were grown and pressed. Without a DOP or IGP, look for the mill's name and address in Puglia and the harvest year.

When to buy and how to store it

The harvest runs from October to December, so new oil ('olio nuovo' or 'novello') arrives in late autumn. Keep oil in a cool, dark place and use it within a few months of opening; a bag-in-box or tin protects it from light and air better than clear glass.
